Our Story

Hello! My name is Michael Ellis and I am the Curious Oyster. Being born and raised in Florida, I have been on the hunt for fresh Florida seafood since I can remember. Whether it was fishing and crabbing with my friends or just visiting the local restaurants to find the freshest catch of the day, I was always curious for more.

This curiosity led me to want to become a chef so I could work (and eat) everyday with all that deliciousness that Florida has to offer. After 20 plus years experience in some of the best restaurants in Florida and fostering relationships with local fishermen and aquafarmers, I am proud to be providing the highest quality oysters and seafood to weddings, private parties and pop-ups.
